Kaduku is non-negotiable in Kerala cooking. These small, round black mustard seeds from Palakkad's fertile plains are harvested when the pods turn golden and dried naturally. When dropped into hot coconut oil they burst open releasing volatile oils that form the aromatic base of curries, chutneys, pickles, and rice dishes.
